**Position Details:**


**The Sanitation Operator -** Demonstrates leadership in the area of safety. This requires observing and enforcing safety rules and practices, encouraging safe work behaviors, and promptly correcting conditions and unsafe behavior, which may lead to accidents. Continually endorse the Quality Food Safety Policies, assure conformance to all requirements of the Quality Food Safety Management Systems, take action to properly report failures of these systems to site management. Responsible for cleaning key Production equipment at high risk for environmental contamination.


A. Essential Functions: 1. Operates foamers, pressure washers, and hose stations in an efficient and workmanlike manner. Uses washing chemicals in a safe manner as established by the company. Fully understands all of the chemicals in the plant: what they re used to clean, how to correctly use them, dilutions, handling of the chemicals, and what to do if improperly exposed to a chemical. 2. Keeps steps, railing landings, ledges, lights, and floors clean and sanitary at all times. Operates stepladders, scaffolding and apparatuses in a safe manner. 3. Washes walls, tank exteriors, and overhead pipes, which may require repetitive motion on a routine basis. 4. Fills out all master sanitation schedules after completing each task. 5. Operates CIP systems and understands the use of chemicals. Fills barrels of chemicals from the bulk feeders. 6. Understands batch/lot, sampling and HACCP procedures/systems. 7. Will be alert to spot malfunctions in the operation of equipment that could be unsafe to the employee, or others in the area. Immediately reports such conditions to their supervisor.


B. Marginal Functions: 1. May paint parts of the building and equipment. 2. Cleans footbaths and may perform janitorial duties in the rest rooms. 3. Operates forklift.


**The Fermentation Operator** - Demonstrates leadership in the area of safety. This requires observing and enforcing safety rules and practices, encouraging safe work behaviors, and promptly correcting conditions and unsafe behavior, which may lead to accidents. Continually endorse the Quality & Food Safety Policies, assure conformance to all requirements of the Quality & Food Safety Management Systems, & take action to properly report failures of these systems to site management.


Operates fermenters and sterilizers, performs CIP and SIP of fermenters and sterilizers, and performs sanitation and housekeeping functions. Controls fermentation process and inoculates with yeast/bacteria to produce a fermented intermediate good which will then be evaporated and/or spray dried by separate departments. Pumps specified number of media gallons through sterilizer into fermentation tank. Turns valves to admit and control air pressure, agitation speed and PH control of the media as it ferments or to accelerate chemical reaction of inoculum. Also, take production samples to analyze in the QA laboratory and take action based on the obtained results. Follows established procedures and run set points to achieve QC approved products with optimal yields at lowest costs.


MAJOR RESPONSIBILITIES include the following.


A. Essential Functions: 1. Operate and perform piping connections for CIP of fermenters, sterilizers and fill lines. Must have understanding of CIP recipes, cycles and chemicals used. 2. Performs sampling, anti-foam and inoculation procedures following established process descriptions, batch sheets and job analysis. Assures that fermentation is within parameters testing and using instrumentation for pH, temperature, pressure, DO, and air. 3. Operate and perform tasks for SIP and Fill of fermenters via sterilizer. Understand general procedures for SIP, CIP and fills, sterilizer fluids (product, water, steam), and sterile water forward, water divert and product fills. 4. Understands and selects fermenters on FIX using FIX screens, graphical displays, real time trends, and historical charts. Calibrates pH transmitters, pH and DO probes. 5. Utilizes computer system for inventory control and pick lists within the Mapics system to perform job functions. 6. Washes and cleans equipment per the sanitation manual. Follows GMP program and rules. 7. Operates forklift.


B. Marginal Functions: 1. Assist other production operators as time/shift allows. 2. May occasionally be required to work within a confined space (fermenters).
